Not bad.  Not a great show.  Some decent recipes this week.  Garlic fries in the oven.  Like that idea.  Pork sandwich and a chicken tenders salad.  Used tortilla chips to bread the chicken.  Two different types... spicey and mild.

I think it has the potential to get better, once he gets comfortable. Guy Fiero strted slowly on Guy's Big Bite.. now his Diner shows are great.....

I did watch it and enjoy it. You are probably right Ric. Guy's Big Bite got better as he did more of them. Diners... is fun to watch.

I don't watch big Guy's bite. But love his diners, dives and drive in's  show!!!  I like seeing different styles of cooking all around ..

I didn't watch big Daddy's kitchen but the food sounds good.. specially right now! ahhahaahaha

I think I am gonna try them out this weekend.  I was drooling watching it on DVR.  Looked so good, I saved it to make sure Mary watched at least that portion. 

 

 

Also, a question.  What kind of bread crumbs did he say to use?  The website uses a video type feed for the recipes and I have no access here at work.  I want to buy the bread crumbs in the morning.

Herb Potatoes au Gratin Recipe courtesy Aaron McCargo Show:  Big Daddy's House Episode:  Dream Dinner


8 tablespoons (1 stick) butter
1/2 cup all-purpose flour
2 cups milk
1/2 cup grated yellow Cheddar
1/4 cup grated American cheese
1/4 cup grated white cheddar
1 teaspoon chicken bouillon powder
2 teaspoons ground nutmeg
1 teaspoon black pepper
3 pounds russet potatoes, washed and scrubbed, peeled and sliced thin Au Gratin:
1 stick butter, melted
2 cups panko bread crumbs
2 teaspoons smoky paprika

Preheat oven to 350 degrees F. In a large sauce pot over medium-high heat, add butter. Stir in the flour until pasty. Add milk; stir to remove lumps and let cook for 6 minutes until it gets thick. Lower heat and add the cheese, bouillon, nutmeg and black pepper. Whisk until well combined and sauce thickens, approximately 4 minutes. Remove from heat.
In a bowl, combine butter, panko and smoky paprika. Stir well.
Place potatoes into a casserole dish. Pour cheese over potatoes and sprinkle au gratin on top. Wrap with foil and bake in oven for 35 to 45 minutes. Remove foil and cook for 10 minutes uncovered. Allow to sit for 10 minutes.

So funny you should ask. I had not really looked at the Lighter Side all night, just came over to post about it. I was gonna start a separate thread, but I will just put it here.

I made them. Made three changes. I used 2% milk instead of regular. I used regular bread crumbs instead of Panko. And I used Potato spice mixture from McCormick instead of Smoky Paprika.

They came out pretty good. I did need to use more milk than he said. Also, the next time I will increase the cheese a little bit. I like 'em real cheesy. On the show he said use three cheeses. I used Mozarella, Swiss, and Cheddar. Also, I probably need to slice the potatoes a little bit thinner.

What a critic I am. But really, they were good.
